World Cup 2010

Recipe of the Month January 2010
Company Head Chef Emlyn Sexon offers this delicious, healthy and wholesome Winter Soup for you to try and enjoy; perfect to chase away the January blues……!
Winter Vegetable Soup Serves four
Ingredients 1 x tablespoon extra virgin olive oil 1 x medium-size onion, diced 1 x Carrot, chopped 2 x Sticks of celery diced 1 x Potato, peeled and diced 1 x Swede Diced 1 x Parsnip peeled and diced 1 x Leek washed and diced 1 x litre veg stock 50 ml Single Cream Salt and freshly ground black pepper to taste Chopped parsley or chives, for garnish
Method Heat the oil in a large saucepan over medium heat. Add the onion, carrot, parsnip, leek, swede and celery and cook, covered, for 5 minutes, or until softened.
Add the potato and stock and bring to a simmer, and simmer for 20 minutes, or until the vegetables are tender. Pour in cream and remove from heat.
Puree the soup mixture, in batches, in a food processor until smooth and return to the saucepan.
Reheat slowly over low heat, stirring occasionally. Season with salt and pepper to taste.
To serve-
Pour into four deep bowls sprinkled with the parsley or chives and Enjoy!
