Welcome to the December 2009 issue of Life’s News-the newsletter from Life’s Kitchen Ltd.
2009 has been a very mixed year for everyone in business in the Square Mile, and it is a pleasure to report Life’s Kitchen Ltd has continued to grow throughout 2009, currently forecasting 10% year-on-year growth in turnover for this full financial year, aswell as other highlights during 2009 such as winning our ISO 9001 accreditation, retaining our resident caterer contract at Watermen’s Hall for a further five years and moving into our new premises, doubling the size of our production capacity. The much lauded “green shoots” of recovery have certainly been in evidence during the final third of 2009, and most importantly we have the strongest order book in our history going into 2010.
Commenting on the ups and downs of the calendar year 2009, Managing Director Nick Levens said “In some ways the market challenges have been incredibly positive for Life’s Kitchen Ltd, as we have developed new offers and relationships with a wide variety of new clients and venue partners that stand us in really good stead for the future, with The Livery Quartet and The Livery Wine & Dine Club key examples............I have been delighted by the consistently strong client feedback we have received throughout this year, and would like to thank each and every member of the team at Life’s Kitchen Ltd for their efforts during 2009-I am incredibly proud of our service and product and immensely grateful for the hard work everyone has put in”

Recipe of the Month December 2009
Emlyn Sexon’s final recipe of the year is a delicious winter risotto combining seasonal vegetables with comforting goats cheese. It is quick, simple and delicious........enjoy!
Butternut, Pea and Goats Cheese Risotto Serves two
Ingredients 1 x Banana Shallot 1 x Garlic Glove 100 ml white wine 150g Risotto Rice 300 ml Vegetable Stock 200g Butternut Squash 150g Peas (frozen) 100g Goats Cheese 4 x Basil Leaves 1x bunch Rocket leaves 50g Butter Salt and Pepper Olive oil
Method Small Dice the Shallot and Chop the garlic then leave to one side. Remove the skin from the butternut squash, dice then season with salt, pepper and olive oil then roast in oven for 12 mins. At 180°C, chop the basil, and dice the goat’s cheese and butter.
Add olive oil to a sauce pan and heat, sweat the onions and garlic. Then add the rice, stir for two minutes until rice becomes transparent.
Next, add white wine, reduce heat to pan and stir rice until wine is absorbed. Then add hot veg stock a ladle at a time until rice is cooked. Stir all the time so rice doesn’t stick to the pan.
When cooked add butternut, peas, basil, goat’s cheese and butter and season to taste.
Serve in a bowl garnished with the rocket leaves and a drizzle of olive oil.
